The other day I needed to make dinner quick with the baby and didn't have time to pick anything up so I had some leftover polenta and some portobello mushroom soup. I took some veggies (i think it was baby bello mushrooms, onions, and kale) and sauteed them in garlic and olive oil and added the soup to make it creamy/saucy. I lightly toasted the polenta slices on the skillet and poured the veggies over the polenta.
